A moka pot consists of three chambers: an upper chamber, a lower chamber, and a filter basket. Once water is heated up in the bottom chamber and steam pressure builds up, it forces its way through the ground coffee beans and into the top chamber where it brews before finally dripping down into your cup below!

BUYING GUIDES: Choose Moka pot
A typical Moka pot consists of a bottom section with a central tube and flanged top, an empty middle section, and a top chamber that includes the filter where the brewed coffee collects as it is pushed by steam pressure through the central tube. The modern design uses two stacked cylinders: one cylinder on the bottom containing water and ground coffee; another placed on top of it containing the filter basket (containing wetting agent) where sieved/filtered coffee collects.
In use, the bottom cylinder receives heat from a stove or other heat source, causing pressurised hot water to pass upwards through the vertical pipe into the upper cylinder containing ground coffee. Pressure builds until sufficient to force liquid – now saturated with coffee solids – past a sprayhead on the underside of the upper cylinder, and down through the coffee into the lower cylinder. The spent coffee grounds are retained in the filter basket in the top of the upper cylinder/bottom of middle section, while clear liquid flows out from a spout on the side.
In use, a small amount of water is placed inside the bottom section; finely ground coffee is placed loosely in a “portafilter” (basket for filter attachment) inside a filter basket which rests upon it; more hot water at near-boiling point is then poured or pumped gently onto extracts: this creates pressurized hot steam that forces its way through a special opening between the two cylinders, up through a central pipe and into an awaiting beverage pitcher or coffee cup. The coffee-water mixture is forced through a thin cylinder of metal, forcing the hot water through the ground coffee beans contained in the filter basket and into the waiting receptacle, usually containing some amount of cold water to stop the process.
What You Should Consider When Buying Moka Pot Coffee
Price – Cheap products are usually made with low quality materials and tend to break easier or not function properly in the first place so quality has its price tag attached. However, if you do not plan on using your moka pot very often then you might want to opt for a cheaper model (i.e. aluminum) just in case it breaks and you need to invest in a new one, which can be pretty costly.
Material – Traditional stovetop coffee makers are made from metal with the exception of some stainless steel varieties but electric moka pots do not necessarily have a single material standard across all brands and models; glass, plastic, and stainless steel are common materials used so make sure you check out what type of Moka Pot Coffee Maker your interested in buying before making an impulse purchase (note that stainless steel is more heat resistant).
Cup Capacity – Coffee consumption varies person-to-person depending on taste preferences and personal philosophy so if you are the only one drinking coffee in your household, make sure you opt for a smaller model (i.e. 3 cup capacity). On the other hand, if you have kids or guests over who also enjoy a warm beverage in the morning then a larger size might be more suitable for your needs (i.e. 6 – 8 cup capacity).
Coffee Size – If you use ground beans for brewing then take note of how fine they are and adjust the grind accordingly; some brewers recommend medium to coarse for moka pots so experiment with different degrees of fineness until you find what works best for your tastes. Additionally, those using whole beans need to consider how large they are as this will affect much pressure is put on the sturdiness of the machine itself, remember that you use less pressure when using finely ground beans.
Brewing Time – Brewing time depends on how much coffee you are making and how long your selected model takes to boil that water before it is forced through the grinds which can vary from a few minutes (i.e. 2-4 minutes) up to 10+. If this is something that concerns your morning routine then think about setting an alarm or buying a programmable variety so you have your pot of Joe brewed and ready for consumption while you get dressed in the morning.
Cleaning and Maintenance – Moka pots require almost no cleaning but if you plan on using one often then think about buying one with detachable pieces as they tend to be easier to clean. Size Considerations
In general terms, the larger the volume of water in contact with the coffee grounds, the stronger and thicker the resulting flavor will be. With most moka pots, increasing volume is straightforward: simply using more ground coffee and/or a coarser grind (smaller particle size). In some cases however, particularly smaller “travel” moka pots used for individual servings of espresso-style coffee, factors such as pressure loss due to backflow or total strength can affect taste.
Moka pots are available in several volumes from 1 to 12 demitasse cups (~30 ml per cup), but 6-cup versions are by far the most common. [There is no universally standardised method for measuring small quantities like 2–3 tablespoons (15–20 ml), hence the predominance of cup-volume measurements in this article]
Moka pots are most commonly available in aluminum, but are also seen in stainless steel and various hardwoods. Larger versions will include an integral milk frothing flask (espresso or cappuccino style).
Features to look for in a Moka Pot
Heat retention is a significant consideration for the moka pot. The boiling water must heat the brew chamber to drive off and vaporize volatile compounds in the ground coffee, such as propylene glycol (a preservative), causing them to expand into steam. This process takes time, and may not start if the coals or flame are too low, or if insufficient heat is conducted through the bottom metal plate of the lower pressure vessel. Hence poor heat retention results in slow extraction rates and underdeveloped flavors when making brewed espresso-style coffee with a moka pot.
Moka pots made from aluminum or other metals conduct heat quickly, but they will only retain that heat while in contact with a hot stove top, oven element, etc. If allowed to cool, the vessel will rapidly lose heat and the above effect is greatly reduced. By contrast, well-made stainless steel moka pots retain heat very well – indicative of good conduction – but are slow to conduct that heat outward by conduction into an external heat source such as a stove top or oven element.
The temperature threshold at which coffee begins to release its extracted flavors is about 94 °C (201 °F). If the water in contact with ground coffee never reaches this point it can produce only weak flavor and little crema from the grounds; if it is allowed to rise much above this point it creates the risk of burning/scalding the brew and imparting unpleasantly bitter burnt flavor compounds instead. Stainless steel pots are popular in part for their excellent heat retention which enables fast boiling without the need to overheat them on a stovetop burner.
